I grew some herbs this summer; lemon basil, cinnamon basil, garlic chives; and want to do some oils and vinegars with them for my family for Christmas. Well, this is my first attempt at it and wondered if anyone could give me tips on which to use with what and what is the best type of base product. I am assuming that white vinegar is best for flavored vinegar but not sure. What on the oil? Any suggestions?

I've never personally made flavoured oils. I have read about them and they use good quality olive oil. I'd suggest a link, except I read it in one of my magazines.

The vinegar, yes I would think white would do. If you used a stronger vinegar then the flavour be masked.

Actually, that's a good gift idea - thanks

I say both. Depending on your taste and what you are cooking.
