I should add that, growing up in the 50's with a large family, we ate most anything that crawled the earth in western PA. My father was an avid outdoorsman and during tough times, if it walked, slithered, climbed, flew or swam, we ate it.
Of the favorites that I remember...rattlesnake, frog legs, lamb fries (similar to prarie oysters...the BEST!), groundhog, squirrel, bear heart.
I can't claim the fame of britboy having eaten so many interesting things. But, as I mentioned, I'll try anything - once.

actually, I would point the finger at how they are raised. I mean, I've had deer meat in a restaurant and it tasted like beef... so much I could hardly tell the two apart. BUT I know that farm raised deer a USDA approved so The Bison someone get's in a store may have similar traits to beef for the same reasons.
I say this because I eat deer weekly and it's not at all like my beef.

Being in the Navy, adventurous and a knife maker for hunters I've tried everything I can but a couple that come to mind are conch and langastines (sp?), basically a cross between lobsters and shrimp from Scotland.

Being from Maine I forgot that Lobster is considered an exotic meat! I've had my share of that over the years. In fact there is a law in Maine where prisoners in jail cannot get fed more then 1 meal of lobster per week. Its an old law back when there was no market for lobster and you could go out at low tide and pluck hundreds of them from between the rocks. I actually prefer mussels over lobsters and clams, but I am spoiled I guess.
As for the domestic versus wild meats, its the same thing with turkey. I like domestic turkey but wild turkey is another matter. It was pretty stringy and tough. We did find out though that the wild turkey that hangs out by the dairy farms grain silo taste pretty good. Because they eat a lot of the spilled grain, they are a cross between wild turkey and domestic turkey. Those taste pretty good thanks to a nuisance permit.

I love vegetarians...slice them real thin, dip them in ranch dressing and they compliment lamb quite well! :-)

but the wild animal vs the domestic one is not confined. Running free the dark meat is produced. Mussel is less desirable when it's very lean. Also, in some cultures, wild hogs are captured live and feed a diet of corn and booze to effect the flavor before they are killed and roasted.
restrained animals taste better.

| Um, I've eaten deer all my life....I've tried goose, which, iff cooked right tastes like beef roast.....buffalo....frog legs....but the strangest, Jerky, kangaroo, crocodile and ostrich (grandma brought them back from AU) and they were SO BAD! YUCK! I make a point to try every thing once (well, almost everything I WILL NOT TRY HORSE DOG OR CAT)
