Does anyone else eat goose on the holidays?

How do you prepare it (if you cut it up, how do you prepare the dark meat parts?)?

What's your favorite recipe for brining and flavoring it before and during cooking?

Any tips? We're getting a small goose and using a deep pan and a Gordon Ramsay recipe (flavoring may be altered if delicious suggestions are made).
